Zucchini salad

Ingredients

zucchini
375 ml
edamame beans
1 ½
avocado(s)
125 ml
coriander
5 ml
lime zest
½
avocado(s)
60 ml
plain Greek yogurt
30 ml
lime juice
15 ml
honey
10 ml
white wine vinegar
To taste,
salt and pepper

Directions

Step 1
Using a madolin or vegetable peeler, cut the zucchini into thin strips (by cutting thin slices lenghtwise, and then cutting them into long strips like spaghetti). Set aside.
Step 2
Cook edamame beans according to package instructions, about 5 minutes into boiling water. Set aside.
Step 3
Use a hand mixer to purée all the dressing ingredients until smooth and creamy.
Step 4
Toss salad ingredients with the dressing. Serve.
