Directions
- Step 1
- Remove outer leaves and heart from cauliflower. Cut and peel broccoli stem. Set florets aside.
- Step 2
- Using a food processor, chop cauliflower heart and leaves and peeled broccoli stem into very small pieces.
- Step 3
- Place all vegetables (cauliflower, broccoli and zucchini) in a bowl and sprinkle with 30 ml (2 tablespoons) of chia seeds, mix. Set them aside.
- Step 4
- Place rack in centre of oven and preheat it to 180 °C (350 °F).
- Step 5
- Spray a bread mold of around 23 cm x 13 cm (9 in. x 5 in.) with cooking spray and line with parchment paper.
- Step 6
- Mix flour, rolled oats, 30 ml (2 tablespoons) of hemp seeds, baking powder, salt, pepper and herbs de Provence. Set them aside.
- Step 7
- In a large bowl, whisk eggs with olive oil. Add chives, grated cheese and vegetables. Mix well.
- Step 8
- Add wet mixture to flour mixture and stir with a spoon.
- Step 9
- Place mixture in the mold.
- Step 10
- Sprinkle the top of the mixture with a pinch of hemp seeds and chia seeds.
- Step 11
- Bake for 50 minutes to 1 hour or until a toothpick inserted in the centre comes out clean, then allow to cool in mold.
- Step 12
- Serve with raw or cooked cauliflower and broccoli florets.
