Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
In a bowl, beat eggs and mix in coconut milk, honey, and lemon zest.
In a large bowl, combine flour, baking powder, and salt. Add coconut oil and mix well. The mix should be lumpy. Add strawberries and basil and stir in well.
Incorporate wet ingredients into dry ingredients and mix well.
Spread mix on baking sheet in a round 1-inch thick shape, about 6 to 7 inches in diameter. If desired, brush with coconut milk and drizzle honey over top. Cut into two equal parts.
Bake for 30 minutes and serve with vanilla ice cream.
