Goat Cheese and Spinach Tilapia

Ingredients

tilapia
240 g
baby spinach
2 clove(s)
garlic
15 ml
lemon juice
To taste,
salt and pepper
120 g
goat cheese
To taste,
lemon

Directions

Step 1
Preheat oven to 200°C (400 °F).
Step 2
Place tilapia filets in an oven-safe dish.
Step 3
In a frying pan, cook spinach, garlic and lemon juice for 2 or 3 minutes, taking care not to overcook the spinach. Salt and pepper to taste.
Step 4
Place an equal amount of spinach on each filet. Top each filet with goat cheese rounds.
Step 5
Bake for about 10 minutes or until flesh flakes easily with a fork.
Step 6
Serve with orzo and zucchini.
