Chia pudding has become increasingly popular in recent years. It’s quick and easy to make, and just as nutritious as it is delicious. SETA suggests this recipe for lime-coconut chia pudding, with the subtle green tea flavour of their Matcha latté blend, a harmonized synergy of 5 superfoods to boost energy and concentration. Try it at lunch or snack time for a delightfully healthy treat! Enjoy!

Ingredients

1 cup
coconut milk
250 mL
½ cup
silken tofu
125 mL
¼ cup
freshly pressed organic lime juice
60 mL
2 tbsp
maple syrup
30 mL
1 tsp.
pure vanilla extract
5 mL
2 tbsp
SETA Matcha latté blend
30 mL
1 tsp.
organic lime zest
5 mL
¼ cup
chia seeds
60 mL

Directions

Step 1
In a blender, add coconut milk, silky tofu, lime juice, maple syrup, pure vanilla extract, and SETA Matcha latté. Blend until smooth and creamy.
Step 2
Pour the mixture into a Mason-style jar, then add the lime zest and chia. Mix well and refrigerate overnight.
Step 3
When ready to serve, pour the mixture into your favourite container or dish.
Step 4
Add toppings like Vegan vanilla yogurt, Coconut shavings or Fresh fruit to taste – we like bananas, blueberries, fresh mint, and organic lime zest.

Tips

Note : If you prefer your chia pudding with more liquid, add the desired amount of plant-based beverage and mix well before adding your toppings.
