Preheat the BBQ to high heat.
Remove the cauliflower leaves, stalk, and core. Cut the core so that you can lay the cauliflower flat on a work surface.
Mix the olive oil, honey, tomato paste, curry powder, smoked paprika, salt, and pepper in a large bowl. Blend well.
Lay two large sheets of aluminum foil on a work surface in a cross shape. Place the cauliflower in the middle.
Pour the marinade over the cauliflower, coating completely. Fold the aluminum foil into a pouch around the cauliflower with the opening on the top.
Put the pouch on the BBQ rack and cook for 30–40 minutes. *Pierce the cauliflower after 30 minutes. If it’s tender, remove from heat. Otherwise, continue cooking for 10–15 minutes.
Meanwhile, grill the almonds in the oven on grill mode.
Once the cauliflower is cooked, garnish with the grilled almonds and parsley. Add a pinch of salt and enjoy.
