Place quinoa in a sieve and rinse well under cold running water until water stops frothing. Drain well.
Put quinoa, soy beverage, and cinnamon stick in a saucepan. Bring to a boil, then lower heat. Cover and cook for about 15 minutes or until soy beverage is absorbed. Let quinoa sit covered for 5 minutes, then remove cinnamon stick.
Toast walnuts and pecans in a small skillet over high heat.
Divide quinoa into serving bowls and top with toasted nuts, blueberries, banana slices, and a drizzle of maple syrup.
