Ingredients

½ cup
semi-thawed frozen blueberries (leave 5–10 minutes at room temperature)
125 mL
⅓ cup
rolled oats
80 mL
¼ cup
unsweetened shredded coconut
60 mL
2 tbsp.
Botanica Perfect Protein Vanilla
1 scoop (30 mL)
Medjool dates, pitted
3 or 4
1–2 tbsp.
honey
15–30 mL
½ tsp.
ground cinnamon
3 mL

Directions

Step 1
Combine all ingredients in a food processor bowl. Blend until smooth.
Step 2
Use a spoon or your hands to shape the mixture into balls. Place on a tray.
Step 3
Serve immediately.
Step 4
Keep for 2–3 days in an airtight container in the fridge.

Tips

Chef’s secret: Using semi-thawed blueberries creates the perfect texture. I store the finished bites in the freezer and take them out 15–20 minutes before serving, so they stay fresh. They don’t maintain their shape well in the fridge.
