BLT pasta salad

1 pack
Du Breton organic bacon, cut in bits
250 g
bell pepper, diced
romaine lettuce, chiseled
2 cups
cherry tomatoes, cut in halves or 2 tomatoes, diced
1/4 cup
fresh basil, chopped
egg yolk
clove garlic, chopped
1 tbsp
Dijon mustard
15 ml
1 tbsp
lemon juice
15 ml
3/4 cup
canola oil
180 ml
1/4 cup
olive oil
60 ml
1/4 cup
fresh grated parmesan cheese
60 ml
To taste salt and pepper


Step 1
To prepare the aioli, in a narrow container, place the egg yolk, garlic, Dijon mustard, and lemon juice. Stir to make the mixture homogeneous. Gradually add the oils while mixing. Add parmesan cheese and mix. Add salt and pepper to taste.
Step 2
Cook pasta in salted boiling water according to package directions. Drain and set aside.
Step 3
In a non-stick skillet, cook bacon until crisp. Drain and set aside.
Step 4
In a bowl, combine pasta, bacon, bell pepper, lettuce, tomatoes and basil. Add the aioli and mix.
