Ingredients

Madame Labriski date puree
250 ml
plant-based milk
80 ml
chia seeds
1 scoop
Vanilla-Flavoured Vega Protein Smoothie
15 ml
matcha
125 ml
unsweetened toasted coconut flakes
750 ml
quinoa

Directions

Step 1
Preheat oven to 180°C (350°F).
Step 2
In a bowl, combine date puree, plant-based milk, chia seeds, and Protein Smoothie.
Step 3
Next add matcha, coconut flakes, puffed quinoa and mix well.
Step 4
Line a baking sheet with parchment paper or a silcone mat so cookies don’t stick.
Step 5
Portion dough onto baking sheet with a spoon or ice cream scoop to create nice plump Labriskis.
Step 6
Bake for about 15 to 20 minutes. Let cool on a rack before devouring. *For crunchier cookies, go with 20 minutes cooking time.
