Ingredients

1
egg
1 cup
milk
1 tbsp
melted butter
Dry ingredients
1 cup
flour
2 tbsp
sugar
1 tsp
baking powder
½ tsp
baking soda
A pinch of salt
1 to 2
apples, cut into rings (about 1.5 cups)

Directions

Step 1
In a bowl, combine the dry ingredients.
Step 2
In a separate bowl, whisk together the egg, milk, and melted butter.
Step 3
Pour the liquid mixture over the dry ingredients and stir just until you get a smooth batter.
Step 4
Cut the apples with a cookie cutter, as shown in my video.
Step 5
Coat the apple pieces in the batter.
Step 6
Heat a slightly oiled skillet over medium heat. Cook the pancakes for 1–2 minutes per side, until golden.
Step 7
Serve the mini pancakes warm in a bowl, like cereal. Add yogurt, a drizzle of maple syrup, or a splash of cold milk for a fun twist.
