Marilou’s Maple Protein Granola

Ingredients

For the nuts
4 cups
quick oats
½ cup
shredded coconut
1 cup
pecans, coarsely chopped
½ cup
sunflower seeds
½ cup
pumpkin seeds
¼ cup
brown sugar
½ cup
Botanica vanilla protein powder
A pinch of salt
For the maple and fruit
½ cup
Compliments maple syrup
½ cup
vegetable oil
½ cup
Baies d’or cranberries
10 to 15
Medjool dates, pitted and diced

Directions

Step 1
Preheat the oven to 300 °F.
Step 2
In a large bowl, combine all the “for the nuts” ingredients. Add the “for the maple and fruit” ingredients directly to the nuts. Mix well.
Step 3
Spread evenly on a large baking sheet, then bake for 30 to 40 minutes, stirring well every 10 minutes.
Step 4
Remove from the oven and let cool.
Step 5
Transfer to a container to store for a few days.
