Grilled shrimp with black garlic aioli

Ingredients

lemon juice

dijon mustard
250 ml
grapeseed oil
To taste,
salt and pepper

olive oil

raw shrimp (31-40 count)
45 ml
parsley

Directions

Step 1
Using a fork, crush black garlic cloves into a purée.
Step 2
In a deep bowl, place egg yolk, lemon juice, mustard, and black garlic purée. Slowly drizzle in oil, whisking constantly with a hand blender or whisk. Continue whisking until texture resembles mayonnaise. Season to taste and set aside.
Step 3
In a large non-stick skillet, sauté shrimp in oil over medium heat until cooked. Season to taste and sprinkle with chopped parsley. Serve with reserved black garlic aioli.
