Chocolate-Coated Dates Stuffed with Homemade Nutella

Ingredients

dark chocolate wafers
325mL
hazelnut butter
75mL

maca powder

vanilla

salt

hazelnuts
pistachios
orange zest
fleur de sel
ginger
raw cacao nibs

Directions

Step 1
Melt 80 mL (1/3 cup) chocolate wafers in a double boiler over low heat.
Step 2
Place melted chocolate, hazelnut butter, 3 pitted dates, maca powder, vanilla and salt in a food processor. Blend until smooth.
Step 3
Using a small knife, cut a date lengthwise and remove the pit. Gently open and fill with 5 mL (1 tsp.) of nut mixture. Place a whole hazelnut on filling and press into place. Place date on a parchment-lined baking sheet. Repeat with remaining dates. Refrigerate for 1 hour.
Step 4
Melt remaining chocolate wafers in a double boiler. Remove stuffed dates from refrigerator and add 4 at a time to melted chocolate. Gently stir to coat and return to baking sheet. Sprinkle with a pinch of the garnish of your choice. Repeat with remaining dates.
Step 5
Refrigerate dates until chocolate has set. They will keep in an airtight container in the refrigerator for 10–12 days.
