Chocolate, Blackberry and Earl Grey Cake

Directions

Step 1

Cake

With the rack in the middle position, preheat the oven to 350°F (180°C). Butter the sides of an 8-inch (20 cm) springform pan and line the bottom with parchment paper.

In a bowl, combine the flour, ground almonds, cocoa powder, baking soda, baking powder and salt.
Step 3
In a large bowl, whisk the brown sugar, oil and vanilla with an electric mixer. Add the eggs one at a time until smooth. With the machine running on low speed, stir in the yogurt, almond beverage, then the dry ingredients. Mix until smooth. Using a spatula, fold in the blackberries. Spread the batter out in the prepared pan.
Step 4
Bake for 40 to 45 minutes or until a toothpick inserted in the centre of the cake comes out clean. Let cool completely on a wire rack, about 2 hours. Unmould.

Ganache

Place the chocolate in a bowl.

In a small pot, bring the almond beverage to a boil. Remove the pot from the heat. Add the tea bags. Cover the pot and let the tea steep for 10 minutes. Reheat the tea mixture for a few seconds.
Step 7
Strain the tea mixture through a sieve placed over the bowl of chocolate, pressing on the tea bags to extract as much liquid as possible. Compost the tea bags. Let the ganache sit for 1 minute without stirring.
Step 8
Whisk the ganache until smooth. Spread over the cooled cake. Garnish the cake with more blackberries and the sliced almonds.

Tips

The olive oil can be replaced with vegetable oil, but it’s olive oil that provides the benefits of polyphenols and antioxidants.
