Directions
- Step 1
- With the rack in the middle position, preheat the oven to 350°F (180°C). Line two baking sheets with silicone mats or parchment paper.
- Step 2
- In a bowl, combine the flour, psyllium powder, baking powder, baking soda, cinnamon and salt.
- Step 3
- In another bowl, whisk together the eggs and maple sugar. Stir in the oil and vanilla, then the dry ingredients. Add the grated apples, ½ cup (55 g) of the diced apples and the raisins. Mix well.
- Step 4
- Using a 3-tbsp (45 ml) ice cream scoop, shape the mixture into balls and arrange spaced out on the baking sheets, about 7 cookies per sheet. With your fingers, flatten the balls until ½ inch (1 cm) thick. Top the cookies with the remaining diced apples.
- Step 5
- Bake one sheet at a time for 18 minutes or until the cookies are starting to brown. Let cool.
Tips
This cookie recipe calls for psyllium husk powder. This is not to be confused with whole psyllium husks, which will not produce the same result and will affect the texture.
The maple sugar can be replaced with the same quantity of maple syrup and an additional ¼ cup (40 g) whole wheat flour.
