Vegan Burgers with Aioli and Marinated Green Kale

Ingredients

large organic green kale leaves

small organic red onion

extra virgin olive oil
1 tbsp.
7.5 mL
fresh organic lemon juice
½ tbsp.
15 mL
fresh organic basil,
1 tbsp.
To taste salt and pepper
125 mL
Veganaise
½ cup
1 clove
garlic
15 mL
organic chives,
1 tbsp.

Directions

Step 1
Preheat the barbecue to medium-high heat and oil the grill.
Step 2
In a bowl, mix the kale, onion, oil, lemon juice, and basil. Season with salt and pepper. Set aside.
Step 3
In another small bowl, mix the Veganaise, garlic, and chives. Set aside and refrigerate.
Step 4
Lower the barbecue to medium heat and grill the Vegeat burgers on each side until they are cooked through to an internal temperature of 74 °C (165 °F). Season with salt and pepper. Grill the burger buns.
Step 5
Top the burger with the vegan aioli and marinated green kale. Serve with a watermelon salad.
