If you’re like me, you enjoy savouring something warm to drink when it’s cold outside, but aren’t big on coffee. This recipe is for you. It’s a truly creamy and comforting taste of bliss.

Ingredients

  • 500 mL (2 cups) water
  • 15 mL (1 tbsp.) black tea
  • 15 mL (1 tbsp.) chai tea
  • 250 mL (1 cup) cashew milk
  • 4 Medjool dates
  • 125 mL (½ cup) raw cashew nuts (soaked in warm water for 1 hour)
  • To taste, maple syrup
  • To taste, cinnamon
  • Coconut whipped cream (topping)

Directions

Add water, black tea, and chai tea to a saucepan and bring to a boil. Reduce heat to low and let simmer for another 10 to 15 minutes. Remove from heat, add cashew milk and mix. Strain mixture in a filter. Add to blender with dates and cashew nuts. Mix well. Add some maple syrup and cinnamon to taste. Serve with coconut whipped cream. The latte can be stored for up to 5 days in the fridge, but it tastes best served the same day.

If you want to make your own chai spice blend, you’ll need:

  • 5 mL (1 tsp.) ground cinnamon
  • 5 mL (1 tsp.) ginger powder
  • 2.5 mL (½ tsp.) ground black pepper
  • 2.5 mL (½ tsp.) ground cloves
  • 2.5 mL (½ tsp.) ground cardamom
